The Kitchen Manager is directly responsible for all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, portion and cost control and sanitation and cleanliness.
Responsibilities of the Kitchen Manager include, but are not limited to: Order supplies, food and ingredients based on rapidly shifting demand Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas. Check and maintain proper food holding and refrigeration temperature control points. Hire and train kitchen staff in specific stations, and cross-train as necessary Create schedules for kitchen staff to ensure there are always enough workers to meet the demand Maintain accurate inventory levels and conduct full monthly inventory Schedule and oversee necessary maintenance and repairs on kitchen appliances Assist with menu changes and adjustments based on seasonal availability Respond personally to guest questions and complaints Ensure DHEC sanitation practices and compliance is always upheld Ensure execution of kitchen is upheld and food quality adhered to Controls expenditures, in food, labor, and supply categories Responsible for executing banquet services Uphold the highest standards of cleanliness, sanitation, safety, and conduct in accordance with appropriate regulations. Other duties, as assigned by Director of Food & Beverage or General Manager. What are we looking for? Demonstrated leadership in team management in back-of-house (BOH) operations in a full-service restaurant setting. Experience with FOH operations and bar knowledge. Ability to work a varied schedule, including evening shifts and weekends. Experience with ordering, implementing effective inventory controls, and managing food and beverage costs. Resort/hotel food & beverage experience is preferred. Exhibits a strong level of enthusiasm and a flexible approach. Strong attention to detail and exceptional communication skills to ensure guest satisfaction and uphold company service standards. Ability to coach and guide associates, fostering teamwork, collaboration, responsibility, reliability, and honesty.
