General Description: The Executive Sous Chef (ESC) will lead all aspects of the a la carte kitchen. The ESC will ensure that quality and cost standards are consistently attained. This dynamic, multi-outlet food service operation annually produces 5 million dollars in food and beverage revenue and employs approximately 30 culinary team members.
Essential Functions: Manage all aspects of hiring, training, and leading the a la carte culinary team members in all outlets of the Club Assist with supervision of culinary professionals, including all Chefs (i.e., Pastry Chef, Banquet Chef, and Sous Chefs, cooks, and utility staff) Assist the Executive Chef with ordering, scheduling, inventory, menu development including cost controls, recipes, food production schedules and production consistency Complete/delegate organizational tasks assigned by the Executive Chef Ensure proper staffing for maximum productivity and high standards of quality Make recommendations for maintenance, repairs and upkeep of kitchen Collaborate with department leaders to assure that implementation of food service meets high standards of the Club Assist with labor and budget monitoring Qualifications & Requirements History of professional and continued education Professional appearance, culinary knowledge, and leadership presence a must Minimum 3 years management experience, including scheduling, ordering and inventory analysis Experience in Banquet and A la Carte operations Must be highly self-motivated Must have a good basic knowledge of Classical and Ethnic Cuisines Must have a strong work ethic and be very organized, honest and ethical Must be a strong leader, team player, proving respectful and thoughtful staff management Passion for the advancement and further education of Culinary Arts Strong organizational and communication skills Must desire to become an Executive Chef in the future Physical Requirements: Must be able to lift 35 lbs., stand for long periods of time, and climb stairs daily  Ability to bend, and lift frequently  May encounter temperatures ranging from 32 degrees to 425 degrees around equipment  May occasionally walk on slippery surfaces  Noise level in the work environment can be occasionally loud  Hours/Schedule:  Must be able to work nights, holidays and weekends Benefits: Our team members are a friendly group of professionals!
