CDHSCareers Description of Job About the Nutrition Services department: The mission of the Nutrition Services Department is to provide quality food service and medical nutrition therapy to more than 1500 clients in a mental health care facility and the Colorado Department of Corrections. With over 100 employees, the department strives, within available resources, to provide adequate nutrition to clients based on medical, spiritual, ethnic, cultural, and mental health needs.


The Diet Office unit exists to compile, process, and disseminate patient or inmate dietary information to the Nutrition Services' Department, CMHHIP and Pueblo-campus Department of Correction (DOC) facilities; as well as, generates modified diet menus; calculates and generates menu nutritional analysis reports; provides technical assistance to the Nutrition Services' department managers; and tracks other departmental activities.


The purpose of this position is to train food service staff and industrial therapy patient workers by following established policies and procedures, standards of practice, and up-to-date nutrition guidelines. Primary responsibilities include developing and implementing nutrition education; providing in-person training to nutrition services personnel; supporting Food Safety and Quality Specialist (Health Professional III, IIB-2193) with quality assurance audits and filing of regulatory compliance documents; and supporting the implementation of departmental policies and procedures, and standards of practice within Nutrition Services.



Duties: Organizes and implements pre-established nutrition education curricula for food service and industrial therapy patients. Provide training regarding food safety, sanitation, and general diet knowledge to staff during orientation, monthly education/in-services, and participation in the annual competency fair. Design and teach food safety and nutrition education classes to new and existing food service employees. Coordinate monthly in-person training on identified nutrition topics and collaborate with the staffing office manager to select dates for in-service training and schedule staff to attend. Support Food Safety and Quality Specialists with the development and/or review of nutrition education materials for food service personnel. Support the Assistant Director of Nutrition Services with developing and establishing training and resources for supervisors. Evaluate and provide recommendations for improvement on quality and effectiveness of existing nutrition standards, materials, and programs. Assists dietitians with the development of nutrition training for patients and staff. Supports evaluation of competencies for food service personnel and participates in coordinating the annual competency fair. Work with food safety and quality specialists to support collecting data for audits. Support testing recipes for texture consistency following established methods. Reviews regulatory compliance logs (more than 500 logs monthly) for completion. Maintain up-to-date knowledge and promotes compliance with Hazard Analysis and Critical Control Points (HACCP), Standards of Practice (SOPs), State and Federal regulations for food service establishments in a hospital setting. Assist with tracking and analyzing quality assurance data. Contributes to the development, implementation, maintenance and integration of CBORD. Run reports such as item allergens, nutrition analysis, cycle cost summary, item usage, production, and purchasing, and evaluates errors in CBORD. Reviewing and maintaining nutritional and allergen information of all food products, while working closely with the Clinical Nutrition Manager to maintain or enhance nutrition and/or allergen quality. Participate in menu development (e.g. new menus, holiday menus etc.) to ensure nutritional and allergen analysis is completed and maintained. Assist in reviewing and providing input for nutrition protocols, policies and procedures for use within the hospital. Utilize reports from the Behavioral Electronic Health Record (BEHR) to obtain new diet orders as well as follow patient admissions, discharges and unit transfers. Conducts rounds to the various Dining Rooms to collect and deliver diet-related information as needed. Other Duties as Assigned Minimum Qualifications, Substitutions, Conditions of Employment & Appeal Rights Experience only and qualifications: Five (5) years of nutrition services experience. Serve safe certified OR obtain in 6 months of hire. ~OR~ Education, Experience and qualifications: A combination of related education and/or relevant experience in nutrition services that equal five (5) years. Serve safe certified OR obtain in 6 months of hire.
Please note - employment history is calculated on a full-time basis (40/hrs per week). Part-time employment is calculated on a pro-rated basis to determine qualifications.
